This workshop was part of my residency at Villa Belleville, where I developed an installation activated through the collection of these shared moments with locals. The project questioned the many ways in which our gaze can shift within our everyday environment. Breadcrumbs from neighborhood bakeries and fish heads from the market became the protagonists of the day.
Through culinary practice, I cultivated gestures that invited continuous wonder through ephemeral and domestic materials. Using edible elements often considered “leftovers” — sourced from local markets and restaurants in the 20th arrondissement — We explored how to transform them together through techniques such as fermentation, ice cream making, and dehydration. From these fragments of accessible materials, we created a playful, multisensory space for learning and discovery.
By gathering damaged or discarded components around Villa Belleville, I explored the notion of “leftovers” and how our perception shifted with the knowledge we acquired. When does a leftover become useful, edible — or, conversely, lose all its value?
To facilitate engagement with these familiar yet rough, hard, fibrous, or scaly ingredients,
I created a series of booklets that trace both common and imagined perceptions surrounding them. These printed objects open a dialogue between culinary and sensory proposals, offering new ways of tasting and perceiving these materials.
